Last summer I had a few conversations with one of the guys in the noon class...he needed to make some changes in nutrition but nothing complicated. I encouraged him to simply cut down on sugar and processed foods, reduce breads, and increase his fruits and veggies. He shared yesterday that his wife has lost 38 pounds and he has lost 14. Very nice!

Roxanne, that is quite amazing. I am really enjoying the Paleo / Primal lifestyle.
My nutrition is feeling really good and I can see improvements in my workouts. So far I have dropped 6lbs since 4 January. My cardio endurance is actually feeling like it is making a comeback...slowly.

Matt and I spent Monday through Thursday at the Marriott for a conference so we ate out quite a bit this week. With the exception of a couple desserts, we did well! We had an amazing lobster stuffed salmon at Roy's and some fantastic salads...eating out does not have to break your nutrition goals. It's so simple to ask for some fresh fruit or veggies in lieu of potatoes or fries, order dressing on the side, etc.
We've been using our crock pot quite a bit lately. I made stew yesterday and pork chops today with some homemade applesauce. Loving it!
The girls and I are going to make muffins tomorrow. They love to bake muffins so we're going to try this recipe. I'm also going to make a batch but sub in almond flour for the coconut and sub cranberries and apricot for the blueberries and see how that works! I'm trying to recreate a healthy version of my favorite Starbucks muffin they no longer have on the menu...I'm hoping it works =) If anyone has come across a great paleo muffin recipe I'd love to see it! Roxanne, I would be interested in how the muffins turn out! I may try them as well and we can compare notes.
For the month of February I am challenging myself to cut back on my sugar intake significantly - only allowing myself sugar on my one 'cheat' day each week. I am excited to see if any weight loss comes out of this, as well as to challenge myself with the amount of sugar I am consuming. I'll try to remember to post throughout the month.
